Grilled Pineapple
I am under no grand misconception that I am a chef. My level of food preparation is generally wrapping up whatever take out we had the night before and taking it for lunch the next day. But sometimes, as rare as those times may be, I make something edible- nay, palatable even! And I will be damned if I let those moments go undocumented.
Ergo: The Grilled Pineapple
1 Large Pineapple
Brown Sugar
Cinnamon
Caramel Sauce
Mint Leaves
Ice Cream
Step 1: Get an adultier adult to use a sharp knife (if you have any of those in your kitchen- tough call) to shave the outer edge of the pineapple. Then cut it into discs. You can remove the core if you want to make an extra step for yourself, but it is not necessary.
Step 2: Have that same aforementioned adult turn on the barbecue (best results are when eyebrows remain on your face, and are not burnt to cinders) let the grill heat up and keep it on a medium to high heat.
Step 3: In a large bowl take a couple hand-full’s of brown sugar (very technical, I know, but depending on the size of your pineapple you may want to adjust the amount of sugar.) and mix it in with the pineapple discs (or rings if you are fancy and made extra work for yourself). Evenly coat all sides with sugar, then generously apply the cinnamon in the same manner. (but like- not with hand-full’s, this is a dessert not the cinnamon challenge I’m not an animal.)
Step 4: Put those suckers on the grill and flip occasionally, letting them get all nice and brown and gooey with some good grill lines. When they are soft to the touch (with your grill tongs, not your fingers. Don't touch cooking food Teagan) they are ready to come off!
Let cool for 5 minutes and then serve with ice cream, drizzle with caramel sauce and top with a mint leaf or two and you have yourself a very instagramable dessert! This recipe will have your dinner guests saying “thats one FINEapple!” (or it will be you saying that while the rest of your household groans, because no one understands the level of wit it takes to keep coming up with solid fruit puns)
